دادی کا شاندار باورچی خانہ Dadi ka Shandar Bawarchikhana (Grandma's Splendid Kitchen)

दादी का बावर्ची-ख़ाना पूरे शहर में सबसे बड़ा नहीं था, फिर भी मुसन्निफ़ के लिए वह बेमिसाल था। उनका शहर देहरादून था, जो आज़ादी के बाद काफ़ी फैल गया। दादी का घर शहर के किनारे एक बाग़-नुमा बंगला था, जिसके इर्द-गिर्द आम, लीची, अमरूद और नींबू जैसे फलदार दरख़्त थे। इनके अलावा एक बड़ा कटहल का दरख़्त भी था, जिसका साया घर की दीवार पर पड़ता था - दादी अक्सर कहतीं, 'मुबारक़ है वह घर जिसकी दीवार पर किसी पुराने दरख़्त का नरम साया हो।'

Grandma's kitchen was not the biggest in the whole town, yet to the author it was unmatched. Their town was Dehradun, which spread out a great deal after Independence. Grandma's house was a garden-like bungalow at the edge of town, surrounded by fruit trees such as mango, litchi, guava and lemon. Besides these there was a big jackfruit tree too, whose shade fell on the wall of the house - Grandma often used to say, 'Blessed is the house whose wall carries the soft shade of an old tree.'

मुसन्निफ़ को दादी के ये अल्फ़ाज़ आज भी याद हैं - सच यह है कि वह एक ख़ुशनसीब बच्चे थे जिन्हें हर वक़्त भूक लगती थी, और दुनिया-भर में शायद ही कोई दादी जैसा खाना पका सकता हो। हो सकता है फ़रिश्ते भी खाना पका सकते हों, पर मुसन्निफ़ को इसका इल्म नहीं। सर्दियों की छुट्टियों में जब भी वह बोर्डिंग हाउस से आते, कम-अज़-कम एक महीना दादी के साथ ज़रूर गुज़ारते।

The author still remembers these words of Grandma's - the truth is that he was a lucky child who was hungry at all times, and hardly anyone else in the world could cook like Grandma. Maybe angels could cook too, but the author had no idea. Whenever he came home from the boarding house for winter holidays, he made sure to spend at least a month with Grandma.

छुट्टियों का बाक़ी हिस्सा वह अपने माँ-बाप के पास आसाम में गुज़ारते, जहाँ उनके वालिद बाग़ात (चाय बाग़ानों) में मैनेजर थे। बाग़ात तो बड़े और पुरलुत्फ़ होते, लेकिन मुश्किल यह थी कि उनके माँ-बाप को खाना पकाना नहीं आता था। घर में एक ख़ानसामाँ था जो रोग़नी खाना बनाता, मगर उसके अलावा वह कुछ और पकाना नहीं जानता था - रोज़ वही रोग़न जोश खाकर अब मुसन्निफ़ ऊबने लगे थे, हालाँकि वह उस वक़्त सिर्फ़ एक बच्चे थे। इसीलिए दादी के घर आधी छुट्टियाँ गुज़ारना उन्हें बहुत अच्छा लगता, और उन्हें ख़ुद भी यहाँ आना पसंद था।

He spent the rest of his holidays with his parents in Assam, where his father was a manager on tea estates. The gardens were big and delightful, but the trouble was that his parents did not know how to cook. There was a cook at home who made rich, oily food, but he knew nothing else besides that - eating the same rogan josh every day, the author had grown bored of it, even though he was just a child then. That is why spending half his holidays at Grandma's house felt so good to him, and he himself liked coming here too.

दादी बिल्कुल अकेली नहीं रहती थीं, क्योंकि यहाँ एक मालन (औरत माली) काम करती थी, और नौकरों के कुआर्टरों में एक लड़की भी रहती थी जो तक़रीबन मुसन्निफ़ की हम-उम्र थी। इनके अलावा दादी के साथ एक बिल्ली भी रहती थी, नाम था 'सूज़ी', जिसकी बड़ी-बड़ी नीली आँखें थीं। और एक कुत्ता भी था, नाम था 'क्रेज़ी', जो अपने नाम की रिआयत से दिन-भर घर के इर्द-गिर्द पागलों की तरह चक्कर लगाता रहता था।

Grandma did not live entirely alone - a woman gardener worked there, and a girl about the author's age also lived in the servants' quarters. Besides them, Grandma also kept a cat named 'Suzy', who had big blue eyes. And there was a dog too, named 'Crazy', who - true to his name - ran around the house all day like a madman.

और फिर वहाँ कभी-कभी अंकल केन भी आ जाते थे, जो दादी के बेटे थे। जब भी उनकी नौकरी छूट जाती (जो अक्सर ही होता था), तो वह यहाँ आकर दादी के पास रहने लगते। कई बार तो वह सिर्फ़ इसलिए भी आ जाते कि दादी के पास आना उन्हें अच्छा लगता था।

And then Uncle Ken would sometimes turn up too - he was Grandma's son. Whenever he lost his job (which happened rather often), he would come and stay with Grandma. Many times he simply came because he liked visiting Grandma.

अंकल केन को खाने का बड़ा शौक़ था, अगरचे वह अकेली दादी की तरह ऐसी चीज़ पसंद नहीं करते थे। अगर कोई खाना उन्हें पसंद न आता तो वह उसे मज़ा लेकर नहीं खाते थे, वरना बार-बार माँगकर बहुत ख़ुश होकर खाते थे। दादी जब भी कोई नई चीज़ पकातीं तो मुसन्निफ़ को उनके चेहरे की तरफ़ देखती रहतीं कि उन्हें वह चीज़ कैसी लगी - मुसन्निफ़ की राय को वह एक कापी में लिख लेतीं, और जब वही चीज़ दोबारा किसी और को खिलानी होती तो मुसन्निफ़ की यह राय उनके बहुत काम आती। इसी सिलसिले में एक मज़ेदार बात-चीत भी होती - मुसन्निफ़ जब दो-चार लुक़्मे खा लेते तो दादी पूछतीं, 'अच्छी लगी?' 'हाँ दादी।' 'पेट ठीक था?' 'हाँ दादी।' 'बहुत ज़्यादा तो नहीं था?' 'ना दादी।' 'थोड़ी और लोगे?' 'हाँ दादी।' 'तो फिर खा जाओ सारी।' 'जो हुक्म।'

Uncle Ken was very fond of eating, though unlike Grandma he did not just like whatever came his way. If he did not like a dish he would not eat it with any relish, but if he did, he would ask for it again and again and eat it with great pleasure. Whenever Grandma cooked something new, she would watch the author's face to see how he liked it - she would jot down his opinion in a notebook, and this proved very useful to her whenever the same dish had to be served to someone else later. There was also a small ritual around this - once the author had eaten a few mouthfuls, Grandma would ask, 'Did you like it?' 'Yes, Grandma.' 'Was your stomach fine?' 'Yes, Grandma.' 'Not too much?' 'No, Grandma.' 'Will you have a little more?' 'Yes, Grandma.' 'Then finish it all.' 'As you order.'

दादी की एक ख़ास डिश अंकल केन को बहुत पसंद थी। पहली बार जब दादी ने यहाँ भुना हुआ लिवर पकाया, तो अंकल केन बहुत ख़ुश हुए थे - वह इसके पहले भी रेल-वे गार्ड की नौकरी के ज़माने में लिवर खा चुके थे। उन दिनों वह अंकल की नई-नई नौकरी छूटी थी, और वह दूसरी नौकरी मिलने तक दादी के पास ही रहने लगे थे।

One of Grandma's dishes was Uncle Ken's particular favourite. The first time Grandma cooked fried liver here, Uncle Ken was delighted - he had eaten liver before too, back when he had a job as a railway guard. Around that time his most recent job had just ended, and he was staying on with Grandma until he found another.

आम तौर पर वह जब भी नई नौकरी खोजने की सोचते तो दादी को यही कहते सुनाई देते कि 'मैं शायद पादरी बन जाऊँ,' क्योंकि छोटे बच्चों को नन्हे पादरी दास बनना बहुत पसंद था - वह उन्हें देखकर घबरा जाते और भाग जाते। लेकिन फिर पादरी भी अंकल केन जैसे बड़े होकर सोए बच्चे को बचाने के लिए मौजूद थे। अंकल केन को खाने का बड़ा शौक़ था और वह अक्सर दादी के खानों की तारीफ़ करते, हालाँकि कभी-कभी अपनी बातों से दादी को नाराज़ भी कर देते और वह परेशान हो जातीं। एक बार अंकल केन ने अपनी ख़ाली प्लेट को अपनी ऐनक तक उठाकर, आख़िरी कौने तक चाट कर देखा और बोले, 'चची ने आज फिर लिवर पकाई।'

Generally, whenever he thought of looking for a new job, he would be heard telling Grandma something like 'I might just become a priest' - though small children found the idea of a solemn young priest quite alarming and would run off at the sight of him. But priests too existed to save grown-up, sleepy children like Uncle Ken. Uncle Ken loved eating and would often praise Grandma's dishes, though sometimes his remarks would upset her too. Once Uncle Ken lifted his empty plate right up to his glasses, licked it clean to the last corner, and said, 'Auntie's made liver again today.'

इस शिकायत के बावजूद अंकल केन ने पूरी लिवर अपनी प्लेट में डाल ली और मुसन्निफ़ के लिए भी कुछ न छोड़ा। मुसन्निफ़ ने भी अपनी सी हरकत की और उनके बदले में उनकी सेब की चटनी की पूरी बोतल अपनी प्लेट में उलट ली। अंकल केन को अच्छी तरह मालूम था कि लुत्फ़ के अंदर भरी हुई चीज़ों को बड़ों की चीज़ें खाने का बड़ा शौक़ था - मुसन्निफ़ को भी पता था कि अंकल केन सेब की चटनी के कितने दीवाने थे, चुनांचे दोनों ने एक-दूसरे से बदला ले लिया।

Despite this complaint, Uncle Ken helped himself to the entire liver and left none for the author. The author did much the same in return - he tipped an entire bottle of Uncle Ken's beloved apple chutney onto his own plate. Uncle Ken well knew that the boy had quite a taste for pinching things from the pantry - and the author, in turn, knew exactly how mad Uncle Ken was for apple chutney; so the two of them repaid each other in kind.

जब अंकल केन बेकार होते या आराम कर रहे होते, तो वह दादी और नौकरानी की बर्तन साफ़ करने में मदद करने लगते - मुसन्निफ़ को भी जब बर्तन साफ़ करने का मौक़ा मिलता तो उन्हें बहुत लुत्फ़ आता था। एक दिन अंकल केन कुर्सी पर बैठे मुर्ग़ी की हड्डियाँ प्लेट में डाल रहे थे, तभी दादी ने मुसन्निफ़ से पूछा कि अंकल केन उन्हें कैसे लगते हैं।

Whenever Uncle Ken was out of work or resting, he would help Grandma and the maid with the washing-up - the author too found it great fun whenever he got a chance to help clean dishes. One day, as Uncle Ken sat in a chair setting chicken bones down on his plate, Grandma asked the author what he thought of Uncle Ken.

मुसन्निफ़ ने जवाब दिया, 'वह और अंकल क्रेज़ी होते तो और अच्छे लगते।' दादी ने कहा, 'इतना बुरा तो नहीं है - बस थोड़ा-सा साइकी है।' मुसन्निफ़ ने पूछा, 'साइकी क्या होता है, दादी?' दादी बोलीं, 'थोड़ा-सा क्रेज़ी।' अपना क्रेज़ी (कुत्ता) भी तो कम-अज़-कम घर के इर्द-गिर्द दौड़ता-फिरता रहता है - मुसन्निफ़ ने भी यही जवाब दिया।

The author replied, 'He'd look better if he were more like Crazy (the dog).' Grandma said, 'He's not that bad - just a little touched.' The author asked, 'What does touched mean, Grandma?' Grandma said, 'A bit crazy.' Even their own dog Crazy, after all, at least kept running around the house all the time - the author gave that same answer.

मुसन्निफ़ ने कभी अंकल केन को दौड़ते हुए नहीं देखा था। लेकिन एक दिन उन्होंने उन्हें दौड़ते हुए देख ही लिया। मुसन्निफ़ और उनका (चचेरा/ममेरा) भाई मोहन एक आम के दरख़्त के साये में खेल रहे थे कि उन्होंने देखा अंकल केन दौड़ रहे थे और शहद की मक्खियाँ उनका पीछा कर रही थीं - यह देखकर दोनों बच्चे हैरान रह गए कि अंकल केन इतनी तेज़ भी दौड़ सकते हैं। हुआ यों कि वह एक दरख़्त के नीचे बैठे हुए थे।

The author had never seen Uncle Ken run. But one day they did see him running. The author and his cousin Mohan were playing in the shade of a mango tree when they saw Uncle Ken running with honeybees chasing after him - the two boys were astonished that Uncle Ken could run so fast at all. It happened because he had been sitting under a tree.

दरख़्त पर लगी शहद की मक्खियों के एक छत्ते को अंकल केन ने छेड़ दिया था - उन्होंने मक्खियों को अच्छा नहीं लगा और उन्होंने अंकल केन पर धावा बोल दिया। अंकल केन घर के अंदर घुसकर टब के पानी में पनाह लेने लगे, फिर भी दो-एक मक्खियों ने उन्हें काट ही लिया। इसके बाद उन्होंने फ़ैसला किया कि वह तीन दिन तक बिस्तर में ही पड़े रहेंगे, और नौकरानी उन्हें वहीं खाना देने आती रही।

Uncle Ken had disturbed a hive of honeybees settled on the tree - the bees did not take kindly to it and swarmed at him. Uncle Ken rushed into the house and took refuge in a tub of water, yet one or two bees still managed to sting him. After that he decided he would stay in bed for three days, and the maid kept bringing him his meals there.

मुसन्निफ़ ने उसी दिन दादी से कहा, 'दादी, मुझे मालूम नहीं था कि अंकल केन इतना तेज़ दौड़ते हैं।' दादी ने जवाब दिया, 'क़ुदरत इसी तरह हमें सबक़ सिखाती है, बेटा।' मुसन्निफ़ ने पूछा, 'क्या मतलब?' दादी ने मुस्कुराकर कहा, 'देखो ना, अब अंकल केन को पता चल गया कि वह वाक़ई दौड़ सकते हैं - इससे बड़ी कमाल की बात और क्या हो सकती है।'

That same day the author said to Grandma, 'Grandma, I didn't know Uncle Ken could run so fast.' Grandma replied, 'That is how nature teaches us a lesson, son.' The author asked, 'What do you mean?' Grandma smiled and said, 'Well, now Uncle Ken has found out that he really can run - what could be a more remarkable thing than that?'
